Thorn-Clarke Wines William Randell Cabernet Sauvignon 2021, Barossa Valley

Proper Cabernet in a good suit. Deep garnet with a youthful crimson core. Blackcurrant, cassis and blackberry, then dark cherry, cedar, tobacco leaf and a little bay.

Full and concentrated, with ripe Cabernet fruit sitting in fine tannin and oak that knows its place. Graphite, liquorice and dark chocolate come through the middle and give it that savoury, grown-up edge. Fresh enough to stay taut, then a long polished finish of cassis, cedar and chocolate. Serious wine. Easy to like.
