Deep crimson with a youthful edge, but don’t let that fool you….this wine builds like a slow-moving storm. Aromas of cassis, blackcurrant and dark plum roll out first, followed by cedar, bay leaf and a strong graphite line.
Then the palate hits. There’s power here, no question, but it’s controlled. Fine, textural tannins start to gather and tighten, gripping the inside of your cheeks as the wine builds with each sip. You can almost see it; the small berries, the neat vineyard rows, the precision of the fruit coming through in waves.
Cocoa, dried herbs and spice layer through the mid-palate, while the oak sits seamlessly, letting the fruit and structure do the heavy lifting. This is a Cabernet that doesn’t shout, it draws you in, sip after sip, revealing more each time.
I’d love to see this wine evolve and revisit it in five-year intervals over the next two decades, it has that kind of pedigree and staying power. And honestly… bring on the roast lamb, Paddy. This is exactly where it belongs.
