The $80 Cabernet has arrived and it means it. There is polish, grip and gulf-breeze snap. Almost black. Cassis, blackcurrant and inky mulberry, then cedar, cocoa, bay leaf and a hint of graphite. Proper shape. Dark fruit and chocolate packed into firm, dusty, slightly grainy tannin. Oak is there but the fruit talks louder. Open it for lamb. Hide a few for later.
