Winemaking Notes

Small batches of grapes are crushed gently, destemmed and then transferred to five tonne headed down open fermenters. The wine is basket pressed and then transferred to a mixture of new and used French oak barriques to complete fermentation. The barrel ferments are aged on lees to slow aging and keep the wine fresh, while also reducing oak influence. All parcels remain separate until final blending when an extensive barrel tasting process is undertaken to determine the final wine. There is no racking until final blending.

Vinomaster Review

Deep crimson with ruby highlights. Aromas of blackberry, plum and black cherry are layered with liquorice, dried herbs and cracked pepper. Hints of dark chocolate and warm spice add richness and complexity. The palate is medium to full-bodied with generous dark berry fruit, supple tannins and balanced acidity. Savoury spice, mocha and subtle oak carry through to a bold, lingering finish. It’s warm and rustic with plenty of ripe fruits and savoury spices. A Shiraz drinkers GSM!

Decant for one hour prior to serving.
