Sourced from Piccadilly in the Adelaide Hills and made in a highly traditional manner, this rare Blanc de Noirs is a limited release of just 160 cases. Handpicked, lightly pressed, fermented wild in old oak barrels with no SO₂ at juice stage, and given oxidative colour removal, it then underwent malolactic fermentation in barrel before spending an extraordinary 6.5 years on yeast in bottle.

The result is a wine of remarkable life and complexity. Zippy freshness meets pure strawberry, blueberry, sherbet, lime, citrus and grapefruit, beautifully balanced by delightful brioche and sourdough toast characters. The palate is super-premium, mouthwatering and utterly delicious, with fine, persistent bubbles and a finish that truly lives on forever.
